Auslese is a term describing very
ripe, late-picked grapes that render
a fairly sweet and luscious desert
wine. These are hand-selected
bunch by bunch.

Kabinett - A legally defined
quality level if German wines that
is governed by the German
government. Kabinett wines are
the lowest rank of Qualitatswein
mit Pradikat wines, stringently
defined as to geographical region
of origin, natural sugar content,
and other attributes.

Spatlese means "late-picked" and
refers to a wine made from fully
ripened grapes with higher sugar
concentrations..

Qualitatswein mit Pradikat (QmP)
This system of assigning rank to
ripeness. The higher usually indicating a
higher (riper) quality. From the lowest
to the highest, they are

> Kabinett
> Spatlese (late harvest)
> Auslese (select harvest)
> Beerenauslese (selected grape-by-grape)
>Trockenbeerenauslese (selected
grape-by-grape, with the grapes on their
way to becoming raisins)

About the Wines:

The Hirschback label has been created to produce a selection of German regional wines from the most popular
growing areas in the Mosel-Saar-Ruwer and Rheinhessen regions.

To construct this selection we call upon our friends at the famous Wwe. Dr. Thanisch estate, of Bernkastler
Doctor fame, to source the wines for us. Through their regional facilirt they obtain on our behalf wines that no
other producer was willing to gather for us. We have tasted this wine selection over a period of several years
prior to deciding what our final chioces would be.

Hirschback litterally translates to mean "Stag Brook" as the label illustrates. It evokes a pleasant scene that is
symbolic of the generous and friendly style of these wines. We know that they will be enjoyed by all and with
most foods, from seafood and poultry to light meats.
